In the kitchen! We have had one FULL weekend! Full of fun, friendship, food and family! Yesterday was had a lovely family from Australia over for dinner. They were absolutely a joy to get to know, learn about their heritage and share stories! And today we had a little "shower" for my new niece MacKenzie (who is ADORABLE!). I do like to entertain and now that the kids, I mean Cole, is a little bigger I can spend some more time in the kitchen. Adam was great and entertained when needed so I could try out some new recipes from Pinterest. So, want to see what my weekend looked, or should I say tasted like?
Here goes:
I actually made this salad for both days as it was SO yummy! It's a maple vinigrette spinach salad. I added strawberries, and candied almonds to the yumminess. Here is the link for this salad (CLICK HERE) I think the kids devoured this salad only for the salad treats as they call it...but that's okay!
Another recipe were these sweet potato fries for dinner. They weren't such a big hit (for any of us). BUT I will say I'll give the recipe a try again. I think there is a fine balance between the amount of corn starch and oil, so I'll play around with it again before I give up on it. We do love sweet potatoes so I'll let you know if I have more success next time. And better yet, feel free to try the recipe and let me know how it goes for you:) (CLICK HERE)
For dessert last night we tried two new recipes. Oh, I should mention to you that I'm one to try new things for people so if it's disappointing we can all be disappointed. If it's great, I know to make it again. I always think if I tell them it's a family favourite and they don't like it, it can be awkward. This way everyone can voice an opinion. Cheesy, I know! This dessert was the favourite of my kids this weekend. Nathan helped make these from start to finish so that of course made it fun. It was really sweet, but delicious. (CLICK HERE) for the recipe.
The other dessert we made last night was a lemonade cake. It was very tasty, but dense. That would be my baking though I think, not the recipe. From the picture, it looks lighter and fluffier than mine turned out, but it was still super good. I'd recommend this one for sure! It will be made again....would be pretty to use pink lemonade....next time:) (CLICK HERE)
I think the big hit of our lunch today was this soup. Adam isn't a soup eater but he had a bowl and said it was good. Translation: YUMMY! I LOVED this soup and it was easy to make. I just did it on the stove top, but there is also a crock pot version if you prefer. If you only follow one recipe link from here today, this is the one to follow:) (CLICK HERE)
And for dessert today I made Key Lime Pie Cupcakes. They were a fair amount of work, but SO worth it! I think this was my favourite of the weekend. They were refreshing and light! YUMMY! I added a little green food colouring in the key lime curd just to make it a little brighter, but beyond that followed the recipe to a "t". (CLICK HERE)
