- 1 Chocolate Cake Mix (and ingredients the cake mix calls for)
- 1 package of Pillsbury Cookie Dough (the take and bake style)
- 1 cup butter, 4 cups of icing sugar, a splash of milk
Start by placing the cookie dough in the freezer! It has to be frozen for this to work to get the gooiest doughy cookie dough. (I do mine over night)
Prepare your cake mix as directed.
Pour into the cupcake pan
Place one of the ready to go cookies in each cupcake. Don't push it down in the batter, just place it on top.
Back the cupcakes at 350 for about 15 minutes. You will not cook the cupcakes as long as the package says, as you have less cake batter in your tin. PLUS if you overbake them, you will not have doughy cookie dough.
Cool and decorate.
To make the cookie monsters, I simply put a blob of icing under a chocolate chip cookie and placed it on a cupcake so it is halfway overhanging. Then ice the entire top and half of the cookie with a size 16 icing nib. To make the eyes, I used the White Chocolate Wafers (the ones you would melt to make chocolate suckers) with a chocolate chip in the middle attached on with icing. Stick them in the cupcake and VOILA! How easy and fun is that!
Let me know if you give either of these a try!
